Brie is an off white, soft-ripened, cheese, with a creamy interior and a soft, bloomy edible rind of white mold which is considered a delicacy. The flavor of Brie is rich, buttery, fruity and a strong earthy aroma. Brie is served with toasted sourdough bread.
