Porchetta di Ariccia IGP is a savoury, fatty, and moist boneless pork roast typical of the municipality of Ariccia, in the province of Rome.
The product is obtained by processing the whole female pig or only its central part (tronchetto), which is deboned and spitted or roasted traditionally over wood for at least eight hours, fat and skin still on cooked and seasoned skilfully with rosemary black pepper and garlic.
